Loaded Baked Potato Soup

So I have to admit, my absolute favorite food is SOUP. Doesn't matter what kind... I love all kinds of soup! But i'm not talking about the stuff out of the can people... it's gotta be the good stuff, the homemade stuff. So here is one of my favorites. It's mmmmm hmmm good!!


Loaded Baked Potato Soup

4 large baking potatoes
2/3 c butter
2/3 cup flour
1 tsp salt
1/2 tsp white pepper (i've used black pepper and it's fine too)
6 cups milk
1 cup sour cream
1/4 cup slice green onions
1 pkg bacon strips, cooked and crumbled
1 cup shredded cheddar cheese

Bake potatoes at 350 for 65-75 minutes or until tender; cool completely. Peel and cube potatoes.

In a large pot, melt butter. Stir in flour, salt and pepper and make a rue. Stir until smooth. Add milk slowly and mix with whisk. Bring to a boil and stir until thickened. Remove from heat and stir in sour cream and cheese and bacon. Add the potatoes and green onions. Should make about 10 servings.

I love to serve this with Club Sandwiches or Hot Ham and Cheese Sandwiches. I've done this a couple of times for girls night and it's been a big success. Happy Cooking!
